I have a hard time drinking half my weight in water every day. I am just not excited about it. Which is why, from time to time, I opt for something like coconut water to help meet my hydration needs. It not only tastes good, but it kind of makes me feel like I am on vacation. All you have to do is find the softest hole (one of the three circles you see), and puncture it to make room for a straw.

And there is the added benefit of coconut meat inside, full of fiber, iron, potassium, and phosphorus. It is a little harder to access than the water, but well worth the effort. I found a great video on You Tube that instructs you to freeze the entire coconut for 12 hours first. Then you gently hit the frozen shell with a hammer as you rotate it. The shell will break away from the meat and you are left with a beautiful white ball of tropical goodness.

On day 25 of this 365 day project, I ate my daily five (including a delicious spinach salad with crispy bacon). Did you enjoy yours?
