My kids and I were eating this jicama and they asked, “Mom, since potato skin is full of nutrients and we eat it, shouldn’t we eat jicama skin, too?” I almost tasted it to see if it was good, but decided to look it up first. Good thing I did because it’s toxic – do not eat the peel. But inside is a crisp, refreshing, edible vegetable. This excellent source of fiber and vitamin C is delicious dipped into a favorite sauce like cilantro dip, or served with a sprinkle of lime juice and chili powder.
