This tiny winter fruit is so delicious when ripe. I love to watch my kids’ faces as they pop them into their mouths. Initially, there is a burst of tart followed by a mouth watering sweetness as you chew. It took me forever to figure out how it all worked and then I realized today that the rind is sweeter than the juicy flesh. Eight whole kumquats add up to nearly 10 grams of fiber – and they are addictive so it is easy to eat a serving.
On day 40 of this 365 day project, I ate my daily five (including roasted cabbage with our annual corned beef). Did you enjoy yours?
Much love,
Kristen
Mmm. So good! My parents have a kumquat tree-but I have yet to see it bear fruit.

I was just thinking that I need to plant one! But it could be years, right? I think we planted our lime tree five years ago and it finally looks like it is trying to bear fruit this year.

Yes-I believe that is what’s happening. lol. Although it’s been a few years now that they have had it, it is still relatively small. (I know the trees get pretty tall).
