One minute salsa

Did you know that tomato-eating men have fewer prostate cancers? A study conducted by Harvard University researchers looked at the eating habits of more than 47,000 men between the ages of forty and seventy-five. According to the results, men who eat ten or more servings of tomato each week had 45 percent fewer prostate cancers than men who ate fewer than two servings a week. This recipe is so easy to make and you can put it on top of everything – from breakfast eggs to enchiladas.

One Minute Salsa

  • Servings: a bowlful

  • tomatoes
  • onion
  • garlic
  • lime
  • parsley or cilantro
  • sea salt


Combine ingredients in a blender or food processor and pulse until desired consistency. I used three vine ripe tomatoes, one pint of cherry tomatoes, one quarter of an onion, two garlic cloves, juice of one lime, a handful of parsley, and a large pinch of sea salt. You can get creative and come up with your own favorite flavor combination.
