On my daughter’s tenth birthday, she wanted to share kale cookies and mango smoothies with her classmates. She’d been talking about it and planning it for months. I was a little nervous about the response, but the kids were amazing and very open minded. And they devoured every last cookie and drank every drop of mango juice. Here is the cookie recipe for anyone who would like to try them…they taste a little like macaroons so if you like coconut, you will probably like these.
Coconut Kale Cookies

1 1/2 cups unsweetened flaked coconut
1/2 cup minced kale (put 2 cups fresh chopped kale in food processor)
1/2 cup sugar
1/2 teaspoon sea salt
1/2 cup coconut oil (or butter cut into chunks)
1 teaspoon vanilla
1 egg plus 1 egg yolk
1 1/2 cups flour
1/2 teaspoon baking powder
Preheat oven to 350 degrees. Mix coconut, kale, sugar, and salt in a food processor for about 20 seconds. Add coconut oil and vanilla, and pulse a few times. Add whole egg and yolk; pulse again until blended. Add flour and baking powder and pulse until combined. Try not to overmix. I used a teaspoon sized cookie scoop and flattened the cookies with a piece of parchment paper on a cookie sheet. Add nuts if desired. Bake for 10 minutes if teaspoon sized; longer for larger cookies.
On day 77 of this 365 day project, I ate my daily five (including a falafel wrap that was full of crispy fresh vegetables). Did you enjoy yours?
