With skin that looks like it belongs to a rhinoceros and a root that looks like a rat tail, this may actually be the ugliest vegetable I’ve ever eaten. I added a few flowers to the plate to make this cancer fighting cruciferous more photogenic. But despite its looks, it really is an incredibly healthy plant food that promotes detoxification and I felt determined to find a way to disguise it as something delicious – like guacamole.

Black Radish Guacamole

  • Servings: a bowl full
  • Difficulty: easy

Ingredients:

4 ripe avocados, halved, pitted, peeled, and roughly chopped

1-2 cloves of garlic, minced

2 limes, zested and juiced

1 small black radish, finely diced

1/2 cup white onion, finely chopped

1/2 cup fresh cilantro, chopped

1 teaspoon sea salt

Directions:

Combine all ingredients and serve with chips.
