My favorite pizza is smothered in fresh tomatoes, peppers, onions, cilantro, and lime – plus a little bit of chicken. And instead of cheese, Rubicon Pizza adds creme fraiche. (Sorry for the dark photo and the unhealthy trend lately – my family is on the road and finding it somewhat challenging to get a really solid five servings of fresh vegetables everyday while outside of our home, although we are trying to make up for it by eating extra greens at breakfast with eggs.)
